Recipes for Poets (and others who want fast, healthy meals)

Thanks to Deb Ager of 32 Poems for suggesting this Recipes for Poets event on the blog of 32 Poems magazine.

Many of you might think we poets have all the time in the world to sit around thinking & putting commas in then taking them out again before cooking ourselves elaborate meals that involve unusual ingredients we tried on our last writer's retreat in exotic location X.

Well, you'd be wrong. Most of us have day jobs. Many of us have families as well. This leaves little actual time to write.

As Deb says in her blog post: "Since most poets have other work that takes their attention away from art, it’s important to have time management skills. One of the many ways I save time is by cooking healthy meals that do not take long to prepare."

So, we participating poets are posting healthy meals that take 20-30 minutes or less. Here is one of my favorites that I invented (serves 2 adults and a child):

Linguini with White Bean Puttanesca Sauce

1 can (14.5 oz.) diced tomatoes
½ can (15.5 oz.) small white beans, drained
½ cup baby spinach leaves, roughly torn
¼ cup sliced olives
½ tsp. dried minced garlic
1 Tbsp. olive oil
½ tsp. dried oregano (or 1 tsp. minced fresh)
1 tsp. small capers (optional)

½ lb. linguini pasta, cooked

1. Cook pasta according to directions.

2. While pasta is cooking combine all the other ingredients in a large sauté pan.

3. Bring sauce to a boil, reduce heat and simmer for 15 minutes.

4. Pour sauce over noodles and stir to combine.

5. Enjoy!

Thanks! I could probably eat all of it myself, but it should serve 2 adults...
